La Cucina Salutare’s festive dessert
During the holidays, as we all know, indulgence is just around the corner. Panettone, pandoro, traditional desserts, nougat, chocolates... At Christmas, calories are no longer counted; the important thing is to enjoy and celebrate together, in total relaxation, at least once a year.
But when goodness meets lightness, even better! Today, Anna - La Cucina Salutare gives us an excellent recipe for a dessert to serve during the Christmas holidays without too much guilt.
Soft, delicately moist thanks to the apples, fragrant, with a crunchy walnut crust... this Christmas plum cake literally melts in your mouth. It is also very quick and easy to make. Let's see how to proceed, prepare the ingredients, and bake a tasty spiced apple plum cake in our decorated porcelain dishes.
Ingredients
- 380 g plain flour
- 2 tablespoons cocoa
- 2 teaspoons baking powder
- 1 teaspoon of baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon ground ginger
- A pinch of ground cloves
- A pinch of cardamom
- 220 g plain yogurt
- 3 eggs
- 180 ml oil (I used extra virgin olive oil, but seed oil is also fine)
- 200 g sugar, or your favorite sweetener
- 20 g vanilla sugar
- 3 apples
- 100 g walnuts
- 2 tablespoons brown sugar
Method
All ingredients should be at room temperature.
Peel the apples and grate them using a large-holed grater. In a bowl, combine the flour, cocoa powder, baking powder, baking soda, and all the spices. In another bowl, mix the plain yogurt, eggs, oil, sugar, and vanilla sugar. Combine the contents of the two bowls, add the grated apples, and mix briefly with a spatula. Pour the mixture into a loaf pan and sprinkle the surface with coarsely chopped walnuts and brown sugar.
Bake at 180 degrees for 50-55 minutes, checking that it is cooked through with a toothpick.
