Thai-style fried snapper by Robysushi

Today we're heading to Thailand with a recipe from Roberta - Robysushi, taking us on a journey of bold and unusual flavors. Let's try Thai-style fried snapper together!

To prepare it, once again our true allies in the kitchen are our W°pots lines, in particular the Millenium series and the convenient Moderna Smart wok with a curved handle, perfect for easy stir-frying thanks to its ergonomic grip.

INGREDIENTS for two people

  • 2 red snapper fillets, 120 g each
  • potato starch to taste
  • 90 g basmati rice
  • 35 g coconut milk
  • fresh coriander
  • 20 g fresh chili pepper
  • 20 g fresh ginger
  • 2 zucchini
  • 10 cherry tomatoes
  • peanut oil to taste
  • rice vinegar
  • salt

METHOD

Slice the zucchini and cut them into strips. Cut the tomatoes and add them to the zucchini. Season with salt and rice vinegar. Put the rice and twice the amount of water in a pot, add salt, cover with a lid, and cook. When cooked, add the coconut milk, stir, and remove from heat. Score the fish fillets on the skin side. Coat them in potato starch and cook in boiling peanut oil until golden brown. Remove from the heat and season with salt. Put peanut oil, peeled and sliced ginger, and chopped chili pepper in a pan. Heat for two minutes. Pour the hot oil over the fish. Serve by placing the zucchini on the bottom and the fish on top.
