One-pot peanut curry with the Millenium line by Good Food Lab

When it comes to saving energy, we can't forget about the kitchen. That's where our Millenium line comes in, or rather, into the kitchen, which Cristina - Good Food Lab has chosen to prepare a tasty recipe waiting to be discovered: peanut curry

It is a Thai-inspired dish, slightly spicy with sweet and delicate nuances, rich and creamy, in short, delicious. And what's more, it's "one pot" ! What does "one pot" mean? It means that you only need to use one pot to prepare it. Cristina chose our Millenium line of aluminum pots, produced using cryo-casting, to have a solid, lightweight, convenient, and attractive utensil that cooks evenly, quickly, and with low impact, without heat loss. The Millenium line is also suitable for induction cooktops .

Let's see how to prepare peanut curry.

INGREDIENTS

  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon peanut butter
  • 1 block of tofu
  • soy sauce
  • spices: paprika, cumin, cinnamon, turmeric
  • 1/2 head of broccoli
  • 2 pak choi
  • fresh peas/snap peas
  • 200 ml coconut milk
  • extra virgin olive oil
  • salt

METHOD

Sauté the peeled garlic, one carrot and the onion, cut into chunks, with 2 tablespoons of oil. Once translucent, transfer to a blender. Add the peanut butter and broth and blend to a creamy consistency.
Meanwhile, marinate the diced tofu with spices and soy sauce.
Add a drizzle of oil to the same pan if needed and a chili pepper. Add the tofu and cook on both sides. Then add vegetables of your choice—for me, sliced carrots and broccoli florets. Finally, pour in the vegetable and peanut cream, add the soy milk and the more delicate vegetables. I use pak choi and tender peas in their pods. Season with salt. Cover with a lid and cook for 10 minutes.
Serve with chili flakes, chopped peanuts, and basmati rice.

You can vary the consistency of your peanut curry by adding more or less broth.
