Easter Monday aperitif with the Cottage line

It's never too early to start thinking about what to do and what to serve during the holidays....
Easter Monday, as we know, is a day dedicated to relaxation, spending time with friends or family, or enjoying a nice outing outside the city. All we can hope for is good weather, but in any case, rain or shine, the important thing is to start off on the right foot. We suggest a nice, relaxed aperitif to be enjoyed in style, served in the colorful porcelain of our iconic Cottage line. 

Today we offer you an idea to copy (and enjoy) thanks to Sara Sguerri - Pixelicious, perfect for convivial occasions in the warm season: canapés with fennel robiola cheese, salmon, and green apple.

Let's see how to prepare them!

INGREDIENTS (for 12 canapés)

  • 12 slices of whole wheat bread
  • ½ Granny Smith apple
  • ½ lemon (juice)
  • 10 g fennel + a few sprigs for decoration
  • 200 g robiola cheese
  • 200 g thinly sliced smoked salmon
  • extra virgin olive oil
  • pepper

PREPARATION

Cut out discs from the slices of bread using a 5-6 cm pastry cutter. Heat a non-stick pan on the stove and brown the bread for a couple of minutes on each side, until crispy. Wash the apple, cut it into four wedges, remove the core and slice each wedge into thin slices. Cut the slices in half and sprinkle with lemon juice to prevent them from turning brown. Cream the robiola cheese and mix in the chopped fennel, a tablespoon of oil, and a pinch of pepper. Lay the salmon on a cutting board and cut it into 12 strips; roll them up to form roses. Spread the fennel robiola cheese on the canapés. Drain the apple slices from the lemon juice and place 3 halves on each; finish by placing a salmon rose on each canapé. Decorate each canapé with a sprig of fennel and serve immediately.
