The Christmas recipe from La Cucina Salutare

Ingredients for 4 people
- 4 sea bass fillets
- 400 g carrots
- 200 g potatoes
- 1 teaspoon of oil
- 50 ml white wine
- 1 broccoli
- Salt, pepper, turmeric, garlic, thyme
Method
Steam the broccoli or cook it in lightly salted water for 4 minutes. Peel the carrots and potatoes and cut them into pieces. Cook them in lightly salted water for about 20 minutes. Drain the vegetables and blend them with a pinch of curry powder until you obtain a smooth cream.
Season the sea bass fillets with salt, pepper, garlic, and thyme. Brush a nonstick pan with a teaspoon of oil and place the fish skin-side down. After one minute, pour in the wine and cook until the flesh turns white.
Arrange the cream on the plates, place the pieces of fish and broccoli florets on top.
